Dear's Homemade Carbonara

Finally I am blogging Dear's homemade Carbonara! I will be sharing with you in this post step by step on how to make this dish...

Step 1: Cook your spaghetti in boiling salted water. Give it an occasional stir to make sure the pasta isn't sticking together

Step 2: You can either choose to use a Italian-style sausage to create meatballs if not alternatively you may replace it with pork or beef minced meat and mixed it into meatball or swedish meatball. At the same time, slice your bacons into smaller pieces.

In our case, we used pork minced meat and mixed it into small balls....

Step 3: Separate your eggs and add the yolk to the mixing bowl with the cream. Beat with a fork until smooth.

Step 4:  Add the meatball to the hot pan and fry it around for 5 minutes until golden brown before adding the bacon. Cook the bacon until it is golden and crispy. When it's done, turn off the heat.

Step 5: Finely grate the zest of half the lemon and some parmesan cheese into the egg mixture and beat again.

Step 6: Finely chop the parsley and add it to the mixture, reserving a little for later.

Step 7: When your spaghetti is cooked, scoop out a cupful of the water to keep then drain off the rest.

Step 8: Use tongs to add the hot spaghetti to the mixing bowl of creamy sauce. The heat from the hot spaghetti will start to cook and thicken the eggs in the mixture.

Step 9: Tip the spaghetti and sauce into the pan with the meatball and toss everything together quickly; adding a little of your reserved cooking water if the sauce is too thick for your liking. Taste the sauce and season with a good pinch of salt and pepper.

Step 10: Get your plate and placed your cooked carbonara. Top with an extra grating of parmesan cheese and chooped parsley and you are ready to serve!
